Grilled Greek Chicken Alfredo

I am sure everyone is aware of how much I love Greek food. Well, if you're not, then search through my postings and you will see that I love all things Greek. It's something about olive oil, oregano, lemon, feta, and Greek yogurt that makes me happy.  My Grilled Greek Chicken Alfredo is one of those dishes that includes all that and more.   I created a rich creamy Alfredo sauce that is full of cheese and cream.  I then tossed hot fettuccine noodles in the sauce while I prepared the Grilled Greek Chicken. My chicken was marinated in Greek yogurt, lemon juice, oregano, loads of garlic and lots of spices.  I marinated the chicken overnight, but a couple of hours would work as well if you're in a rush. After the sauce and pasta cooked for a few minutes, I tossed in fresh Italian parsley. No-Bake Strawberry Banana Pudding Twinkies® Cake

I was scrolling through Pinterest and saw a Twinkies cake, not sure who made it, not even sure what went in it, but I knew I was about to create something with Twinkies and Jell-O banana pudding in it! This leads me to one of my favorite quick desserts, strawberry shortcakes. Strawberry shortcakes include a fluffy cake, like a Twinkies cake, covered in strawberries and whipped cream, often topped with more strawberries. I used Twinkies in place of the shortcakes and covered them with jell-o banana pudding. Next, I topped them with sliced strawberries that were mixed with a little powdered sugar.  Cover the strawberries with loads of whipped cream. Top the whipped cream with the diced strawberries. Cover with saran wrap and refrigerate for about 3 hours.   After a few hours of chilling time you can serve the cake!  My family loved this cake, they said it tasted like a strawberry shortcake but way better. Pecan Coconut Granola

If you're like me then every time you see granola you want it! What I don't want is the high cost of purchasing granola and the fact that it's just not as fresh or as cost effective as making it yourself.   When the wonderful people at Zulka Morena® Pure Cane Sugar reached out to me for recipe development my first thought was, why not granola? I wanted a granola that was full of coconut, cranberries and loads of pecans.   It's a really simple process, you mix all the ingredients together in a bowl, minus the dried fruit and bake for about 20-25 minutes, stirring every 5 minutes to brown evenly. Allow the granola to cool for about 30 minutes, then stir in the dried fruit. Granola is very forgiving so add as much nuts and dried fruit as your heart desires. Grilled Tandoori Chicken Kabobs with Hot Lime Pickle and Roti

As you know, I've been on vacation and I ate so much Indian food I can't even began to explain the food goodness that was happening. I am trying to recreate one of my favorite meals which is Tandoori Chicken. I just love spicy food and Indian food covers my spice addiction.  I went to Rani's World Foods to not only eat, but for spices. I've followed Rani's from California, Texas, and now Las Vegas. Yes, I've been lucky enough to have a Rani's World Food in all my hometowns. Rani's a spice lovers dream and the food, OMG, the food is so good, it's all vegetarian, but believe me you want miss the meat. I ate so many samosas filled with potatoes and peas and dipped in mint chutney that I think I might be a little addicted.  Back to the chicken, which is marinated in Tandoori spice, yogurt, lemon, a little more spices and olive oil.  Grill the chicken for about 7-8 minutes per side. Grilled Steak Pizza with Spicy Roasted Garlic Chimichurri Sauce

I've been on a mini vacation and I have taken this time to eat some of the best food Las Vegas has to offer. I will be sharing a few of these delicious meals I've experienced over the next week, all recreated my way! Today I start off with my Grilled Steak Pizza with Spicy Roasted Garlic Chimichurri Sauce. I went to an Argentinian restaurant and they had some of the best steak I've ever eaten and they served it with a big cup of chimichurri sauce. They also included fresh baked bread to dip in the chimichurri sauce.   I decided to take this dish and turn it into a pizza and I also kicked up my chimichurri sauce with the addition of roasted garlic and a Serrano pepper. I marinated my steaks, grilled them up and then used Naan flat bread as a pizza crust. All done and ready to eat, I also served an extra side of chimichurri sauce for dipping. Greek Easter Traditions: Koulourakia & Kokkina Avga

Once again, I can't believe how quickly Easter has arrived this year. It seems like Christmas has only just finished and another celebration is upon us already. In Greece, at the end of last year, I was given a recipe for koulourakia, a traditional Greek Easter biscuit, made to be eaten after Holy Saturday. I have really enjoyed the koulourakia that my mother in law makes each year, and this year I was excited to have an attempt at making my own. Traditionally, koulourakia are made on Holy Thursday, along with red eggs (kokkina Avga) and Tsoureki, Greek Easter Bread. Koulourakia are a butter based cookie, and come in certain traditional shapes (including a braid, a figure eight, a 'lifebuoy' circle and an s-shaped 'snake' cookie with two swirls at either end).
