Oven Baked Frito Chili Pie

After making that Spicy Thai Chicken Curry yesterday, you would think one would cut back on the spice today! But why would I do that...I love spice and it keeps things very interesting because you never know how hot something truly is until you taste it! That curry by the way, you've been warned. My family loves chili and I make it about once a week, sometimes I will double the recipe and freeze half so I can use it for chili dogs or to top hamburgers with. I added beans again Texas...lol...I love beans and I like to throw them in my chili. Sometimes I have to grind them up to hide them from Big Goo...he is totally against beans in his chili. For this Oven Baked Frito Chili Pie, I went with Big Scoops because I knew I was going to crush them up before I started assembling the dish. I layered chips, cheese, chili, chips, and more cheese. Smothered cabbage is really simple to make, just cook up some bacon, use that bacon grease to saute your onions and peppers in and add the cabbage, a little broth and apple cider vinegar and that's it. Yes, I know Slow Cooker Sunday was suppose to be yesterday. With the excitement of the Vitamix giveaway happening (entry below) , I preferred to move up Slow Cooker Sunday...to Slow Cooker Monday...for this week only! Everyone who follows my blog knows how much I love Italian food, especially pasta. My goal was to recreate my favorite Sunday Ragu and make it in my Crock Pot Slow Cooker ! Did I mention how much I love my slow cooker...well I am hooked. I purchased the Crock Pot Triple Dipper Warmer last week and I used it for my daughters birthday party Friday...let me tell ya...it kept my queso and shredded slow cooker chicken taco meat hot all night...you better get ya one and try it! This is really simple, the only cooking required was to saute the veggies in olive oil, add the tomato paste to "burst" open the flavors, and brown the meat. Holiday Joy! The holiday gifts have started arriving early! Thanks to the wonderful people at Surfas Culinary District , I entered and won a new Vitamix !   Surfas Culinary District is a foodie lovers paradise, they have everything...I mean any and everything one could possible need for creating wonderful meals. If you're lucky enough to live in California, stop by one of their many locations, if not, shop online and be prepared to spend hours on their website! I could not contain my joy of winning a Vitamix which meant I needed to use it immediately, which lead me to creating my Chewy Oatmeal Cookie Cheesecake. Thanks to Surfas Culinary District and my new Vitamix I was able to blend the cheesecake batter up in minutes, with no mess! I baked my cheesecake for about 2 hours and 15 minutes, then I allowed it to cool at room temperature for about 4 hours. Refrigerate and allow the cheesecake to chill overnight.
