Mexican Meatloaf with Garlic Mashed Potatoes

I am so excited to share with you my Mexican Meatloaf with Garlic Mashed Potatoes! First, I haven't posted in the last few days because we're in the process of moving our blog to a new home. Secondly, we're switching from blogger to WordPress. Same site, same great recipes! This move should take place in the next couple of days. I wanted to create a meatloaf that didn't require me chopping and sauteing a whole bunch of veggies. This left me with the idea to use salsa to take the place of the veggies. I used roasted red salsa and green salsa to add tons of flavor to my meatloaf. I also boiled my potatoes with loads of garlic cloves that becomes nice and tender just like the potatoes. The sun is shining and it's grilling time!  I am so excited to have my recipe featured on the wonderful Cheryl Style blog today! My Grilled Korean Bulgogi Steak Kabobs with Yellow Rice Pilaf is the perfect welcome to Summer dish. This is one of the simplest dishes around. Chuck roast diced into chunks and marinated overnight with grated pear, garlic, sesame and olive oil, ginger, and lots of wonderful spices. After being grilled to perfection, the steak takes on a wonderful flavor of sweet, spicy and tangy. Don't forget the perfect side dish for the steak kabobs is this beautiful Yellow Rice Pilaf. I created the wonderful color and flavor of the rice pilaf with the help of turmeric powder, grated carrots and chicken broth. All done and ready to eat! Enjoy. Slow Cooker French Dip Sandwich

It's a Slow Cooker kind of day! I wanted to create a hearty meal that would fill these folks up in this house. I also didn't want to dirty any dishes and my Slow Cooker French Dip Sandwich accomplished all of that and more! Normally when I slow cook meat, I always sear the meat in a skillet first before adding it to the slow cooker. As I said above, I didn't want dishes so I skipped that step. I rinsed my meat, pat dry, season with all the spices on both side. Top the meat with the remaining ingredients, cover and cook for about 5 hours on high. After 5 hours I shredded the meat, placed it back into the slow cooker and then it was assembling time! You need fresh French hoagie rolls, loads of fresh mozzarella and hot pickled peppers. Place everything on the bun with a little mayo and it's ready to devour! All done, ready to eat, what ya waiting for! This dish is so simple and no dishes, which makes it that much more of a winner. Chinese Chicken Salad with Wonton Croutons

It's salad time, again! I love salads and I try to make one everyday. Often I make two salads in a day but my family recently started a salad revolt against me. The rumor around my house is, I eat too much salad and soup but I am not one to gossip so you didn't hear that from me! My Chinese Chicken Salad with Wonton Croutons is one of my favorite salads to eat. First, I create a wonderful vinaigrette dressing with soy sauce, red wine vinegar, honey, ginger, lemon juice, spices and olive oil. All you have to do is place all these ingredients into a large jar and shake it! Don't forget to lid the jar first, yes, I've made this mistake. Next, wash some of your favorite veggies. I used leaf lettuces, grated carrots, and cucumbers. I was suppose to add a little grated cabbage but forgot to pick it up from the store. Greek Chicken Kabobs with Yellow Feta Rice and Tzatziki Sauce

Hello everyone, I wanted to share with you one of my Ultimate Greek Chicken Dinners! My family and I are addicted to Greek food, yes addicted. I can't go a week without cooking something Greek and it's always Greek Chicken or Spanakopita, which is a Greek Spinach Pie. BTW, I will make Spanakopita soon for the site. My Greek Chicken is really a simple, but flavorful recipe. I take extra virgin olive oil, plain Greek yogurt, loads of garlic, dried oregano, and a little other spices. Mix all these ingredients together in a bowl and marinate for about 2 hours or overnight if you can wait that long. Next, let's prepare the feta rice. I turn my rice a vibrant yellow color with the use of turmeric. This rice is flavorful and the feta cheese kicks it up! The rice is cooked, and the chicken has been grilled for about 7-8 minutes per side.  The Tzatziki sauce is really simple.
