 It was a day filled with family, great Greek food, fun, and custom; we look forward to many more days filled with the same. A serving of my Gigantes with bacon and Cretan Graviera cheese - Click to enlarge image In the spirit of ushering in a New Year with something novel, I offer my own spin on one of the classic dishes of Greek cookery: a baked bean dish that we call “ Gigantes ” (pronounced ‘YEE-ghan-dess’) after the name of the extra large runner beans that are its main ingredient. Five varieties of Gigantes beans have been registered as PDO/ PGI produce within the European Union by the Greek government. Gigantes beans are cultivated primarily in the area of Lake Prespa, in the north-western part of the Greek region of Macedonia, but they are universally enjoyed throughout Greece. The summer grilling season ensures a steady supply of grilled vegetables on our table. One of my father's favourite salads during this period is also one of the most notorious in our family. You have probably walked by them a thousand times in the vegetable section wherever you shop, and yet, you may never even have given them so much as a second glance. Here is what I often think about whenever I see hot banana peppers in a market: My father proffered a plate and slid a cousin of one the beauties from the photo above on to my dish. He instructed me to roll it up, slip it into a wedge of folded pita, and take a large bite. My mother, meanwhile, warned me not to listen to my father, that the pepper was too hot. Gemista… Stuffed Peppers and Zucchini (Vegetarian)

Stuffed Peppers and Zucchini just like grandma used to make... This is one of the quintessential Greek dishes and can either be cooked as a vegetarian meal or made with the addition of ground beef. This version is vegetarian and Lenten friendly for those of you who may be avoiding meat or fasting. This particular recipe was my grandmother’s and she used to make it in a wood-burning oven which made all the difference in flavour. Variations on this dish include stuffing tomatoes and other vegetables; however, this specific recipe works best with peppers and zucchini. Years ago, here in Canada, before Greek food became synonymous with fast food fixes like Souvlaki and Gyros, all of the Greek restaurants on Danforth Avenue (Toronto’s Greek town) served stuffed vegetables along with other “ magirefta ” or ‘ready-cooked’ meals. Feta and Roasted Red Pepper Piquante When outdoors in the late summer and early autumn, in neighbourhoods where there are Greeks, chances are you'll catch the scent of roasting peppers wafting on the breeze. With our family this practice is almost a ritual. My father visits the farms north of Toronto to find the best peppers available. We then set aside the better part of a Saturday afternoon and we hold a pepper roast! The wonderful scent of grilling peppers is one of my earliest and fondest reminiscences of family cooking as a child. So, I just love going into the freezer and pulling out the roasted red peppers we froze from last summer. I roasted an entire bushel of red peppers on the barbecue and then we packed them in small batches and put them in the icebox for use throughout the winter months. This recipe is one of my favourite things to do with those roasted red peppers; it is easy and quick to make, and is an excellent appetizer dip for entertaining guests. Recipe 1...
