Slow Cooker Chili Cheese Fries and a KitchenAid Mixer Giveaway!

Slow Cooker Sunday! It's Slow Cooker Sunday folks! Yes...my favorite day of the week! I look forward to the opportunity to share with you each week a new slow cooker recipe. Oh, don't forget I have a KitchenAid giveaway ( entry below ). Today, I present Slow Cooker Chili Cheese Fries...and NO...the fries are NOT going in the Crock-Pot slow cooker...lol...! You can fry them when the chili is all hot and ready, and/or bake them in the oven like my Baby Girl does. This recipe is going to require a little work.   I make my chili verde from scratch, but if you don't have the time, replace the roasted chili sauce with about 1 cup of store bought green chili verde and mix that with 6 ounces of hot tomato sauce. This will take less than a minute, and now you're ready to start slow cooking! I am going through an Asian food phase if you haven't noticed.  I think I've cooked Asian food at least 5 times a week in the past month! I often go through phases in my cooking, sometimes I can't stop cooking Italian food, and then Greek, and don't forget Mexican...it happens in waves people...lol. I get a taste for a certain food, then I can't stop cooking and eating it! I will wake up in the middle of night and start making egg rolls...yes, it's that bad...! Hey, they freeze well, but never last that long in my house. Oh...by the way I have a giveaway ( entry below )...it's the KitchenAid mixer...I love my KitchenAid Mixer, which I use all the time!!! I am so happy the weekend has finally arrived! All week I've been helping my Baby Girl get ready for her midterms. She refuses to understand the importance of being organized and prepared in advanced. I keep warning her that when she goes off to college, I will not be able to sit in class with her and organize her notes. She continuously explains to me that "Ma' you're a tiger mom...lol...AND, everyone can't multitask like you." Cheesy Chicken Cordon Bleu Casserole

It's Cheese time! Yep...I just made a Super Cheesy Chicken Cordon Bleu Casserole. Just think about it, layers upon layers of cheese sauce, surrounded by more cheese, with hot chicken chunks, black forest ham and loads of Genoa salami...yes, it's that good and rich!   It's a casserole people, and any good casserole must be hearty, rich, and extra cheese doesn't hurt! This dish is simple and goes together in minutes. No, flattening chicken, trying to stuff it with ham and cheese only to have it pop open while cooking, and all the cheese starts oozing out everywhere. Yes, I must admit, that has been my experience. Instead, we take those same ingredients, plus a few extra ones and turn everything into a simple casserole. Roasted Chicken Ramen Noodle Soup and a Sucre King Cake Giveaway!

Before we start discussing this delicious Roasted Chicken Ramen Noodle Soup, I must send out a final reminder. It's the last day to enter the Sucre King Cake Giveaway ( entry below )! O.K., now back to my soup! Back story...well I have two stories...the first is that I've eaten ramen noodles for as long as I could remember. Growing up in California it was like a before the real meal snack. And I say before the real meal, because often times Ramen noodles did not fill you up and you found yourself hungry in about 10 minutes. Although I've always enjoyed ramen noodles and all the veggies inside, I never enjoyed the broth. I would never drink it after finishing off my noodles, it tasted way to salty for me and it's just a bad memory of all my ramen eating days! Story number two started last week when my foodie friend Patti, at the wonderful blog Comfy Cuisine posted a Japanese Shoyu Ramen Soup . The soup was so beautiful looking, I could taste it through the screen...lol....
