Quick and Easy Roasted Chicken Flautas with Bacon Guacamole




Flautas are rolled flour tortillas stuffed with whatever you like! I've stuffed them with cheese, beans and cheese, jalapenos and cheese, sweetened cream cheese, and any other leftover food I could find.


You can make flautas sweet or savory, and stuffing them with sweetened cream cheese and dipped in melted chocolate is like food heaven.

I also like to sprinkle a little cinnamon sugar on top as well...you can treat a flauta like you would a french crepe, it's just thicker, and fried.


Today, it's all about the savory and I took a store bought roasted chicken, removed the skin and bones and shredded it up.

It's really that simple, and a perfect after school snack for the kids.


I made the flautas in about 5 minutes, you can bake them at 350 degrees for about 15-20 minutes, if you don't want to fry them, make sure you spray them with cooking spray or brush with a little oil prior to baking.

You can also prepare them in advance, freeze, then heat when ready to eat!


I fried up some bacon then I made some fresh guacamole and folded in the crispy bacon.


I like to eat these right out the fryer because I don't want to lose my crunch factor.

It's a great idea to have the guacamole already prepared, then fry the flautas. 


If you don't like flour tortillas you can substitute corn tortillas, change the name to taquitos and it's still a tasty and crunchy snack! 


I am ready to eat and don't forget to dip these babies in that bacon guacamole and enjoy!

Oh...I almost forgot, serve with lots of hot sauce if you like your food extra spicy!

Update...lol...you need to remove the toothpicks before serving...!


Quick and Easy Roasted Chicken Flautas with Bacon Guacamole

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 4

Ingredients:

2 cups roasted chicken, skinless, shredded
1 cup cheese, grated
1/2 cup prepared salsa
12 flour tortillas, small
2 Haas avocados
1/2 tomato, seeded, diced
1 tablespoon cilantro, chopped
1/2 lime, juiced
1/2 fresh jalapeno, seeded, chopped
3 strips cooked bacon, crumbled
pepper, salt
toothpicks
1 cup cooking oil
sour cream

Directions:

Shred chicken, place in bowl, toss with salsa and set aside. Place half of the tortilla shells in the microwave and heat for about 10 seconds to soften.

Add about 1 tablespoon of chicken and cheese in the middle of each tortilla shell, roll up and secure with a toothpick, repeat. Heat remaining tortillas and repeat the process.

Dice bacon and place in a skillet over medium heat, cook until crisp about 7 minutes, remove drain and set aside.

In a bowl add avocados, a pinch of pepper and salt, lime juice and mix well. Add cilantro, jalapeno, tomatoes, mix well and fold in bacon and set aside.

Heat cooking oil in skillet over medium heat to about 325 degrees, add flautas in batches and cook for about 2-3 minutes on each side or until golden brown.

Drain on paper napkins and repeat. Top with guacamole and sour cream and enjoy.
